Indian cuisine is a vast, regionally diverse culinary tradition shaped by geography, religion, and centuries of cultural exchange. It features an intricate use of spices such as turmeric, cumin, coriander, ginger, and cardamom, creating dishes that balance heat, aroma, and depth. Food varies dramatically across India—from wheat‑ and dairy‑rich northern dishes to rice‑, lentil‑, coconut‑, and seafood‑based southern and coastal preparations—reflecting local climates and ingredients. Rather than a single unified style, Indian cuisine is a tapestry of hundreds of regional food cultures, each with its own techniques, staples, and flavor profiles.

My first attempt at Indian food started with a jar of Dopiaza sauce, pork chops and fresh mushrooms. While it turned out well and there were no leftovers, I do plan to make a few tweaks on future attempts.
