Pork and Mushroom Dopiaza

My first attempt at Indian food started with a jar of Dopiaza sauce, pork chops and fresh mushrooms. While it turned out well and there were no leftovers, I do plan to make a few tweaks on future attempts.

I have wanted to experiment with new things in the kitchen for some time now and Indian cuisine has continued to call my name. The aromas, flavors, and richness of the food are very appealing to me; however, I am also intimidated by the spices used in many Indian dishes.

Finally, after much consideration, I decided to give it a try. Since neither my wife nor son are particularly fond of hot or spicy food, I needed to choose a dish that was relatively mild and easy to prepare. I chose the Dopiaza sauce because it provided a delicious, flavorful base for the chicken, without being too hot or spicy to scare off my family. I believe this first attempt at Indian cooking turned out better than I expected. The chicken was tender, the sauce was flavorful, and the entire meal felt like a slow-cooked meal even though it was prepared quickly. The only part of the meal that did not seem to fit well was the stir-fry vegetable mixture that I included.

While it was not necessarily bad, it simply was not appropriate for this type of dish. Both my wife and son agreed that in the future I should omit the vegetables completely and simply serve the chicken over rice. My son even suggested incorporating water chestnuts for a little extra texture (which I think would be a fantastic addition). I expect to make several adjustments to this recipe as I continue to experiment with different variations over the coming months. Regardless of what changes I ultimately decide upon, I am pleased with the results of this first attempt and believe it will become a regular fixture within our weekly meal rotation. Now that I have taken my first steps into the world of Indian cooking, I am excited about exploring further specifically, learning how to create my own Dopiaza sauce from scratch. Given the success of this first attempt, I look forward to continuing this culinary journey.

  1. Slice your pork into thin slices or cubes.

  2. Heat up your skillet then add our oil until it starts to warm up. Then add your pork, garlic, salt and pepper. Stir and cook 5 minutes until edges are browned.

  3. Reduce heat to medium and add your Dopiaza sauce until it starts to boil. Add your mushrooms and stir until they are well coated. Cook for 10 minutes.

  4. If you are going to add the stir fry veggies, add them and stir until well coated. Heat until the veggies are warm but firm.
