Beef Noodle

One of my favorite meals as a child was the Stroganoff my mother used to make. While I have that recipe it is a long, slow simmer and a lot of work to prepare. I created this recipe to simulate the flavor while keeping it simple and easy to make after a long day at work. The ingredients used are readily available and easy to keep in your freezer and cupboard.

I prefer to use No Yolks Dumpling noodles, but you can use any noodle you prefer. I also replace the broth with Better than Bullion, dissolving it in 2 cups of water. I also cheat by using jarred minced garlic, but feel free to chop your own.

  1. In a large dutch oven add your ground beef, salt, pepper and garlic until the beef is fully cooked. Optionally, you can drain the fat for a low fat meal.

  2. Add the cream of mushroom soup and broth and bring to a low boil.

  3. Add the raw noodles and stir until all noodles are incorporated in the sauce. Cover and simmer on low heat for 10 minutes.

  4. Add the sour cream and stir until fully incorporated. Cover and simmer on low another 8-10 minutes.

  5. Serve alone or with your favorite dinner rolls or biscuits.
